Ingredients:
2 cucumbers, peeled
4 small plum tomatoes
3 scallions
1/3 cup flat-leaf parsley
1/4 cup fresh mint leaves (optional)
1/3 cup chopped fresh dill
3 Tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste
Instructions:
Chop the vegetables finely. Mix in remaining ingredients. Serve at room temperature.
